White Calcite is calcium carbonate (CaCO₃), not a separate mineral species from other colours of calcite. It crystallises in the trigonal system and defines 3 on the Mohs hardness scale.
Calcite also has perfect rhombohedral cleavage: it can split along three directions into slanted, flat-faced pieces. Those neat surfaces aren’t necessarily evidence of cutting or polishing. Nature has its own geometry department.
Some white calcite specimens are UV-reactive, fluorescing under suitable ultraviolet light. However, the colour and strength of the response vary with the specimen and UV wavelength. White colour alone doesn’t guarantee fluorescence, so a particular glow should only be advertised after testing the actual stock.
